Creative and tasty Thai Green bean Salad, cool and spicy, perfect accompaniment for grilled Thai food.
This is a recipe I first came across stumbling the Healthy Green Kitchen food blog, which had in turn been shared from a post on FOOD52 by Amber of LovesFoodLovesToEat.
Thai Green Bean Salad by Loves Food Loves to Eat
Mine is a slightly different adaptation, so you might want to compare the two and see which path you wish to take. But thanks go to Amber for her creation!
INGREDIENTS:
- 12 ounces string beans (blanched, wax beans or haricots verts)
- 2 tomatoes, thinly sliced (roma)
- 1 bell pepper (red or yellow bell pepper, julienned)
- 4 scallions, shredded
- 2 fresh red Thai chilies, thinly sliced
- 2 tablespoons chopped cilantro
- 2 tablespoons chopped fresh basil
- 2 tablespoons chopped fresh mint
- 3 tablespoons soy sauce
- 1 tablespoon vinegar (rice vinegar)
- 1 tablespoon Splenda brown sugar (or brown sugar)
- 1 teaspoon fish sauce
- 1 lime (zest and juice from)
- 1/4 taspoon garlic paste
METHOD:
Step 1
Toss together blanched beans, tomatoes, bell pepper, scallions, chilies and herbs.
Step 2
Whisk together dressing and pour over salad, tossing to mix.
Step 3
Chill several hours before serving.
