Creamy Peas with Mushrooms and Garlic

One of the recipes I am posting for play in the Culinary Quest.
Peas always popular in Ireland, this one takes a left turn from the usual mushy peas or garden peas with mint and dances around with the flavors of mushrooms, roasted garlic, and cheddar.
I bought fresh peas in the pod, and they shrink down quite a lot- don’t base the weight on the pods. Fresh peas are also available already shelled at many markets. If you use frozen peas be sure to abide by the cooking time on the package as it is generally much shorter than fresh peas.

It’s been a very stressful and hectic week here with a death in the immediate family, so forgive me if I am short on chit-chat. I do want to get a number of recipes up before the quest begins (it’s a cooking event in an online group I participate in).

Creamy Peas with Mushrooms and Garlic

Ingredients:
- 1 pound fresh peas (don’t weigh the pods)
- 1 teaspoon chicken base or 1 chicken bouillon cube
- 3 cups water
- 2 tablespoons butter
- 2 ounces sliced mushrooms
- 1/4 cup roasted garlic cloves
- 1/2 cup light cream
- 1 ounce shredded Irish cheddar cheese
Method:
- Stir chicken base in water and bring to a boil; add peas and simmer 15-20 minutes or until tender (larger fatter peas will take the longer time).
- Heat butter in a saute pan; add mushrooms, thyme, salt and pepper, cooking until tender.
- Stir in roasted garlic cloves, cooked drained peas, and cream.
- Heat over low heat until it simmers, but do not boil.
- Add cheese and remove from heat; stir until cheese melts.
