Spaghetti Rings in Tomato Sauce

Today I am sharing recipes along with other blogging friends that are suitable for back to school. For this recipe, it is essentially a DIY spaghetti o’s recipe like the type that children love that come in the can.
And while this one uses a canned soup to flavor it, making it this way gives you a greater amount of control in how much sauce goes on it vs. how much pasta, as well as if you want to add your own meat (such as vegetarian crumbles).
I know my daughter liked the canned stuff when she was little and when I came across the anelli pasta I knew I wanted to work this out. So this is the first edition of it, and later on, I will work out how I want the sauce using fresh tomatoes or normal canned tomato sauce.
But if you like something semi-convenient for now, this is perfect for you.
Join me tomorrow when I share my recipe which is another clone for the Campbell’s type bean and bacon soup. That one is essentially from scratch although I used canned beans in it, although cooking your own beans from dried is not really a big deal. For school it is perfect to put in a thermos, and should be one that kids enjoy.

Spaghetti Rings in Tomato Sauce

Ingredients:
- 1 pound uncooked ring pasta or anelli siciliani noodles
- 20 ounces (2 cans) condensed tomato soup
- 1/4 cup tomato paste
- 2 teaspoons granulated sugar
- 2 cups water
- 4 ounces shredded cheddar cheese
Method:
- Cook noodles according to package directions or until tender and drain.
- Stir together and heat condensed soup, tomato paste, sugar and water.
- Pull the sauce off the heat and add the cheese, stirring until it melts and blends in.
- Toss cooked drained pasta with sauce.

My Little Miss is a pasta fanatic. I have never given her the canned stuff but my kids, like yours, loved it when they were young. I think I will make this for her lunch tomorrow as a special treat. Thanks Sue.
I remember a time when all my daughter would eat was this type of food from a can. Well, she would also eat fish sticks! I love to cook, so this period in her life was a struggle for me. This recipe would have been a favorite for her!
