Strawberries and peanut butter combine in a crisp strawberry sugar dusted quesadilla to make a fantastic breakfast, afternoon snack, or impromptu dessert.

Strawberry Peanut Butter Quesadilla

My recipe of the day is for Strawberry Peanut Butter Quesadillas, which include a made-from-scratch  strawberry sugar for #NationalPeanutButterDay.

Quick and simple to make (even the strawberry sugar!) these can serve as a simple breakfast on the run, a  delicious afternoon snack or even an impromptu dessert, as they take 20 minutes or less to prepare.

Strawberry Peanut Butter Quesadilla

  • Servings: 4
  • Difficulty: easy

Quesadilla Ingredients:

  • 4 (6-inch) flour tortillas
  • 1/4  cup peanut butter
  • 4 teaspoons strawberry preserves
  • 8-10 fresh ripe strawberries, sliced
  • butter

Strawberry Sugar:

  • 1/4 cup freeze-dried strawberries, pulverized into powder
  • 1 teaspoon vanilla powder
  • 1/4 cup granulated sugar

Method:

  1. Crush freeze dried strawberries into powder and mix with vanilla powder and sugar; set aside.
  2. Lightly butter tortillas on one side.
  3. Place butter side down on a griddle and spread with peanut butter on one side, the preserves on the other, then top half with strawberry slices and fold over.
  4. Griddle on both sides until golden.
  5. Dredge in strawberry sugar while warm, and slice into wedges to serve.
