Chipped Chopped Ham Sandwiches are my recipe of the day for the From Our Dinner Table blogging group, who meet once a week on Sundays to post on a variety of topics. This week it is about Regional Favorite recipes.
For my selection, I chose the knockoff of the Pittsburgh Isaly’s Chipped Chopped barbecue ham sandwiches that are popular in Pennsylvania, eastern Ohio and West Virginia.
I never had this in that area, but I do recall something similar that was sold around St. Louis when I was a kid that was produced in Belleville Illinois. That used to come in jars and was sold near the cold cuts. It came in ham and also roast beef in sauce and I loved them both.
So best as I can tell this recipe is a cross between how that was and how chipped chopped from Isaly’s would be. I think you’ll like it.
The Taste?
It has a slightly sweeter and milder flavor than a spicier Texas style bbq sauce, so if you don’t normally like really spicy things but want something milder, this might be perfect for you.
These chipped chopped ham sandwiches I did in slider format, because we do love to eat those and they are great for having as a t.v. snack. Either when times allow guests over to entertain or just with your family, they will definitely be appreciated.
This is also something that you could pack in a thermos and take on a picnic to serve as sandwiches in the park. Spread a quilt in a quiet shady place all your own and enjoy the day with perhaps an easy bag of chips and some lemonade.

Chipped Chopped Ham Sandwiches

Chipped Chopped Ham Sandwiches
Ingredients
- 1/2 cup water
- 1/2 cup Open Pit original bbq sauce
- 1/2 cup ketchup
- 3 tablespoons sugar
- 1 teaspoon Worcestershire
- 1 pound chopped ham very thinly sliced or chipped
- 1 12- count package King's Hawaiian Savory Butter Rolls or similar
- Swiss cheese slices
Instructions
- Simmer ham in a mixture of water, barbecue sauce, ketchup, sugar and Worcestershire sauce until sauce in pan reduces enough to coat the ham adequately.
- Serve ham on slider buns with Swiss cheese slices.

My brother in law (used to live near Pittsburgh) sent us the ham and sauce for these. We never seem to reduce the sauce enough but these are soo good!
