Red Chili Shrimp and Noodle Salad is my recipe of the day with the blogging group From Our Dinner Table. We group together weekly to post recipes on common topics. This week we are sharing some serious shrimp recipes. Glad you could join us.

I am sharing my recipe for Red Chili Shrimp and Noodle Salad with you, which has Thai  flavors and cold cooked shrimp.

This is a perfect option for me to have for lunches in warm weather months. Being made ahead, the salad is also a great  choice for potlucks and picnics to pack and take along.

I know things like sesame noodles and dandan noodles are close to my heart, so this is not  a recipe I would easily tire of. I would expect it to be well-received by others as well.

It is made easily with packaged instant ramen noodles. You can ditch those seasoning packets or save them to drop into  quick soups. I like to be frugal and use those up with extra veggies I may have in my vegetable bin. I want that cleared out before I do additional grocery shopping.

Ingredients

Noodle Salad:

  • 1/2 pound peeled and deveined cooked shrimp
  • 2 teaspoons peanut oil
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger
  • 2 packages instant ramen noodles 3.5 ounces each
  • 1/2 red bell pepper diced
  • 1 hot red Thai chili pepper minced (optional)
  • 4 scallions thinly sliced
  • 1 tablespoon minced cilantro

Dressing:

  • 1/3 cup Thai sweet chilli sauce Mae Ploy
  • 1 tablespoon fresh lime juice
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon honey
  • 2 teaspoons roasted chili oil or spicy sesame oil

Instructions

  • Discard ramen seasoning.
  • Cook and drain ramen noodles.
  • Whisk dressing.
  • Combine cooked noodles with remaining ingredients and chill.
