My recipe is a simple one inspired by another recipe in the CI magazine issue called All-Time Best Thanksgiving Recipes. I am not sure it’s new. It sounds like a reprint from an earlier year. I have seen publishers recycle content. So if you plan  on buying, check  to see if  you already have it. If you  collect.

Equipment

  • 1 Soup pot

Ingredients
  

  • 2 tablespoons olive oil (or poultry fat such as turkey dripping or schmaltz)
  • 1 medium onion chopped
  • 2 ribs celery diced
  • 2 large carrots sliced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried marjoram
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon minced garlic
  • 1 bay leaf
  • 6 cups water
  • 2 tablespoons turkey base or chicken base (Better than Bouillon)
  • 3/4 cup quick cooking barley
  • 2 cups diced roasted turkey
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions
 

  • Sauté the onion celery and carrot in oil until semi-soft.
  • Stir in the thyme, marjoram, red pepper, garlic, bay leaf, water and base, stirring until base mixes in.
  • Add the barley, turkey, lemon, salt and pepper.
  • Bring to a boil, then reduce heat, cover, and simmer for about 30 minutes or until the barley is tender to your liking.
  • Taste for salt again and adjust to your liking.
