Welcome back to Fall Flavors week! I had intended to share a recipe on Wednesday, but fell prey to the Curse of the Missing Recipe. I’m sure my fellow bloggers are familiar with this foe. The paper with that recipe is around here somewhere, but darned if I could find it when I needed it.
It will no doubt turn up later. When it does, it will find it’s way onto Palatable.
However, all is good for today! So I’m happily sharing my Apple and Spinach Salad recipe with you all. I specify only a crisp apple here. At this time of year there are a wide variety of apples available that fit the bill.
This salad combines the apple of your choice with a mix of leafy greens, red onion, crunchy walnuts, dried cranberries and goat cheese crumbles. Finish with a homemade vinaigrette dressing and you have a refreshing and delicious salad perfect for Fall.

Apple and Spinach Salad
Ingredients
Salad:
- 2 cups baby spinach
- 2 cups mixed baby greens
- 1 medium crisp apple cored and chopped
- 1/4 cup thinly sliced red onion
- 1 small rib celery finely diced
- 1/4 cup dried sweetened cranberries
- 1/4 cup crumbled soft goat cheese
- 1/2 cup candied walnuts
- 2 tablespoons arugula sprouts or other microgreens
Vinaigrette:
- 1/4 cup extra-virgin olive oil
- 1 teaspoon Dijon mustard
- 2 teaspoons granulated sugar
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Whisk together vinaigrette and pour over salad, tossing lightly.

That meatball recipe hides somewhere and I will find it eventually. It’s not just ordinary meatballs, but kraut infused. The file is probably hiding in another file with a typo in the title so it doesn’t come up in a global search. When it’s a 2 day recipe (meatballs first day, sauce second day) I put the first recipe away to protect it but this time it was its undoing. rofl!
