Roasted Brussels Sprouts with Feta Cheese

My husband and I both grew up with a very 60’s-70’s mindset on brussels sprouts – meaning that both of our mothers only knew one way to prepare them, namely, boiled until mushy and served with cheese sauce. No wonder most kids back then despised brussels sprouts!

Then some years ago we heard of roasted brussels sprouts, and the first time we tried them opened up a whole new perspective on this oft-maligned cruciferous vegetable. There is simply no comparison. Roasting eliminates that, erm, stinky aroma, and brings out a whole other level of flavors.

For today’s recipe, I had decided to try roasting them with feta cheese and Greek flavors of dill, garlic, and lemon. We both thoroughly enjoyed this approach. This would be great with Greek-seasoned roasted chicken and potatoes. It would also pair nicely with other Mediterranean flavors. The possibilities are endless.

Equipment

  • 1 Nonstick baking sheet

Ingredients
  

  • 1 pound Brussels Sprouts tiimed and halved
  • 8 cloves garlic halved
  • 2 tablespoons olive oil
  • 1 zest lemon
  • 1/2 teaspoon dill weed
  • 1/4 cup feta cheese crumbled

Instructions
 

  • Toss together the Brussels sprouts with garlic cloves, oil, lemon zest and dill weed.
  • Spread on baking sheet and sprinkle with crumbled feta.
  • Roast at 375F for 35 minutes or until tender.
