The oven roasted corn is actually a recipe from Tyler Florence, no adaptation. Just very simply the way it is. Heat your oven and toss the corn in. It works, and nothing needs adjusting. Except maybe if you like your corn cooked more than I do or Tyler Florence does, or if it is later in the season corn with larger, tougher kernels that need to be roasted longer. I used an heirloom variety of organic red corn in the top photo. It is quite dellicious! But really, it tastes and cooks just like every other kind of corn, so use whatever variety you prefer.

See? Sometimes there was a valid reason your corn wasn’t cooked enough.

Oven Roasted Corn

Ingredients:

  • 2 ears fresh corn in husk

Method:

  1. Preheat oven to 350.
  2. Place corn with husks on, directly on oven rack and bake or 20-30 minutes or until corn is as tender as you like.
  3. Peel back corn husks and remove silks before serving or use easy shuck method demonstrated below.

This probably makes a little bit more chipotle butter than you’ll need for two ears of corn. It does keep a while in the fridge, but if you want, make it into a log on waxed paper, roll it up. twistie tie the ends, and you can freeze it for up to a few months. You can slice off what you need after it’s frozen, if you want a pat to pop onto a grilled steak or something.
Oh? Did I forget to mention this is delicious on grilled and roasted meats? And not to mention how crazy good this is drizzled over popcorn…

  • Servings: 4-6

Chipotle Butter
Ingredients:

  • 1/2 cup butter, softened (1 stick)
  • 2 to 3 chipotle chiles (canned)
  • 2 teaspoons adobo sauce (from canned chipotle chiles)

METHOD:

  1. Puree all in a blender or food processor.
  2. Place the butter on a sheet of plastic wrap or wax paper and cover.
  3. Roll the butter up, forming it into a long log shape and place in the refrigerator or freezer until ready to use.
  4. Serve the rolled up log or cut off slices as needed.
  5. Goes great on grilled chicken and corn on the cob.

Easy Shuck Method

I’d seen something like this going around on Pinterest and Facebook using the microwave. But I have to admit that I don’t really like using the microwave for corn. And why would I? If I soak my corn, it is easy enough to toss on the grill. And if I don’t have time I just turn the oven on, toss it in there right on the rack, using this recipe. And that is easy enough to pull the husks right back with only a little bit to just pinch off, but this is even better, especially if you plan to use corn holders.

And, the best part is that it works, as I demonstrate for you in the photos below.
