I really must be behind the times because I only recently tried the cookie butter cream cheese at Trader Joe’s, and don’t recall having tried cookie butter per se at all. SO it must be a very large rock I have been hiding under, although I don’t get to Trader Joe’s as often since I moved closer to the Jungle Jim’s market, which has a much broader selection.
But after one bite as a sample, I bought a pack of raisin bagels and also some Windmill cookies to use this on, and set about to make it. That part was not that hard since I already had a good sample of imported speculaas spice which lists the ingredients on the label, and after just a bit of tinkering, I had it fairly close.
With some cream cheese and a couple of cookies, you can mix this up without having to use the cookie butter from the jar. I like it smeared on the bagels, and cookies, and just by the spoonful.

DIY Cookie Butter Cream Cheese
- 8 ounces cream cheese (room temperature)
- 2 Windmill cookies
- 1/2 cup sifted powdered sugar
- 3/4 teaspoon Speculaas spice (see my recipe in link)
Method:
- Pulse cookies in a food processor until they are fine crumbs.
- Add remaining ingredients and run until smooth.
- Chill before serving; serve as a spread for Windmill cookies or mini cinnamon raisin bagels.
Makes about 1 cup.
