Crispy Pimento Cheese Cups is my recipe of the day with the blogging group Sunday Funday. We group  together on Sundays to post jointly on  a variety of recipe topics. New Year’s Eve is fast approaching so that  is on our radar this week.

Crispy Pimento Cheese Cups

Crispy Pimento  Cheese Cups fill  pre-baked frozen  phyllo pastry shells with a made from scratch pimento  cheese spread which whips  up  in a  few  minutes. Just use  the food processor to shred and blend. Then chill it to firm  up.

These are quite popular in my house and disappeared in record time.  Everyone loved the crunch and the flavor of the cheese is fantastic without being spicy.

I did heat the shells in  the oven  for just a couple minutes to get the maximum crispiness. But it is quite easy to make the cheese ahead.  So you can have these on the  party appie table in no time.

Equipment

  • Food Processor

Ingredients
  

  • 1.9 ounce package Athens pre-baked frozen phyllo shells or similar (thawed)
  • 2 slices cooked bacon (crumbled)

Pimento Cheese Spread:

  • 4 ounces mild block cheddar cheese (shredded)
  • 2 ounces cream cheese (softened)
  • 1/4 cup mayonnaise
  • 1/4 teaspoon paprika
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon onion powder
  • 2 ounce jar diced pimiento peppers (drained)

Instructions
 

  • Combine ingredients for pimento cheese in a food processor; pulse until smooth, then chill until firm.
  • Briefly toast the shells in a toaster oven to crisp them up.
  • Use a small scoop to fill the shells with pimento cheese; garnish with crumbled bacon.
