Copycat Canes Chicken and Sauce is my recipe of the day with the blogging group Foodie Extravaganza. We group together monthly to post recipes pertinent to food holidays and events. This month we celebrate National Fried Chicken Day.

I decided on Cane’s chicken strips and dipping sauce based upon what I feel constitutes it.
The dipping sauce is a bit like many other secret sauces out there. Especially ones used for chicken and double decker burgers.

Copycat Canes Chicken and Sauce
Ingredients
Chicken:
- 1-1/2 pounds boneless chicken cut into strips
- cooking oil or shortening as needed
Brine:
- 1 cup whole buttermilk
- 1-1/2 teaspoons salt
- 1 teaspoon garlic powder
- 1 teaspoon poultry seasoning
- 1 teaspoon Louisiana hot sauce
- 1/2 teaspoon paprika
Batter:
- 1 cup flour
- 1 cup buttermilk
- 1 cup water
- 1 teaspoon salt
Sauce:
- 1/4 cup thousand island dressing
- 1/4 cup mayonnaise
- 2 teaspoons ranch seasoning
- 1 tablespoon ketchup
Instructions
- Mix brine and add chicken. Let rest, refrigerated for several hours.
- Mix together sauce ahead of time and chill.
- Mix batter until smooth. Drain chicken from brine, discarding brine.
- Dip chicken into batter then add to moderately hot oil, cooking until crisp, browned and 165F inside. Drain from hot oil.
- Serve chicken with dipping sauce.

I have never heard of Canes but your chicken and dip sound delicious.
I looked on a map and sure enough, they have not invaded Michigan yet. Look for them to start popping up like weeds.
