Greek Spinach Salad is my recipe of the day with the blogging group From Our Dinner Table. We group weekly to post new recipes on a variety of common topics. This week we’re featuring fresh Spring side dishes. Glad you could join us!

I am offering up a Greek Spinach Salad which combines two of my favorite salad recipes: spinach and Greek. To my fresh spinach leaves and the homemade vinaigrette I’ve added all the best toppings.

Along with this you should feel free to add toasted pita as a bread. As well, any Greek entree, such as moussaka or pastitsio/macaroni bechamel.

Ingredients

Salad Dressing:

  • 1/3 cup Extra Virgin Olive Oil
  • 1 teaspoon Cavender's Greek seasoning
  • 1 teaspoon minced garlic
  • 2 tablespoons red wine vinegar
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Salad Fixings:

  • 8 ounces baby spinach leaves
  • 1 cup chopped cherry tomatoes
  • 3 scallions chopped
  • 6 ounces feta cheese crumbled
  • 1/2 cup pitted kalamata olives halved
  • 1 cup diced English cucumber
  • 6.5 ounce jar marinated artichoke hearts drained and chopped
  • 6 whole pickled pepperoncini sliced into rings
  • 1/3 cup shredded Parmesan cheese
  • 2 tablespoons fresh chopped mint
  • 2 tablespoons chopped Italian parsley

Instructions

  • Whisk together dressing ingredients.
  • Combine salad ingredients in a bowl.
  • Pour dressing over salad and serve.
