Warm Potato Salad with Kielbasa is my recipe of the day for the blogging group event Alphabet Recipe Challenge.
We love potato salads in the Palatable household, don’t you? I like to have a variety of potato salad recipes at hand. That way I can select one to pair perfectly with whatever main dish I’m having. Not only different flavors or ingredients, but both cold and warm potato salads.
This potato salad is similar in flavor to traditional German potato salad, except it has smoked sausage instead of bacon. And the potatoes are cut differently.
Like German Potato Salad, it has a tangy dressing with a sweet & sour character, and is served warm. Of course, this salad goes great with many German dishes or other Central European fare. Give it a try, I think you’ll enjoy it!

Warm Potato Salad with Kielbasa
Equipment
- Large saucepan; salad bowl
Ingredients
- 2 lb diced red potatoes
- 3 tbsp olive oil
- 1 teaspoon salt
- 1 tsp black pepper
- 1 teaspoon garlic
- 1 tbsp oil
- 1 cup diced red onion
- 12 oz smoked sausage diced
- 1 teaspoon caraway seed
- 5 tbsp sugar
- 1/4 cup warm water
- 1/2 cup cider vinegar
- 1 tablespoon Italian parsley
- 1 tablespoon dried chives
- 1/2 cup sliced scallions
Instructions
- Cook until potatoes are tender about 15 minutes in boiling water. Drain.
- Season potatoes with s&p and garlic.
- Whisk sugar with warm water and vinegar until completely dissolved.
- Cook for about five minutes to thicken dressing.
- Brown sausage, caraway seed and onion in oil until sausage is lightly browned.
- Add to potatoes and dressing.
- Stir in parsley and chives.
- Serve warm.

Yes, please. I like a warm potato salad, and I love caraway. (My friend’s German mom always made a great potato salad.) Not to mention, kielbasa is one of my favorite sausages. This is a great, stick to your ribs salad!
This looks fantastic. I could keep it hot, add a fried egg and toast, and serve it like a hash for breakfast!

Ooh, I’ve got some jalapeno smoked sausage hanging around that needs to be used and this would be perfect!
Sue made this for hubby as he was craving for some meat. Left my warm salad without the sausages and added some to his. He enjoyed this salad so much. I feel I will be making it more often.
Oh, yeah! I’ve never tried kielbasa in potato salad before…but now I won’t be able to stop thinking about it!
