Cranberry Pecan Granola

For my third offering for #BacktoSchool recipes I chose to make granola, which I made with cranberries and pecans. It is good as a small bagged snack or as a topping for yogurt.
Forgive that I am not adding more write-up as there has been a death in the family, and I just wanted to get this up for now, since I am posting with a blogging group.

Cranberry Pecan Granola

Yield: 2 dry quarts
Ingredients:
- 3 cups old-fashioned oats
- 2 cups chopped pecans
- 1 cup craisins or dried sweetened cranberries
- 1/2 cup sweetened flaked coconut
- 1/4 cup chopped candied ginger
- 1/3 cup light brown sugar
- 1/2 teaspoon salt
- 1 cup pure maple syrup, divided
- 4 tablespoons melted butter
- 1 teaspoon vanilla extract
Method:
- Preheat oven to 250°F.
- Stir together the dry ingredients in a mixing bowl.
- Stir vanilla into the butter.
- Drizzle granola with butter mix and 1/3 cup of the maple syrup and stir to combine, until oats are at least all a little bit damp.
- Line a baking sheet with nonstick foil and spread the granola on it.
- Bake for 75 minutes, stirring about every 15-20 minutes or until granola is browned.
- Remove from oven, drizzle with an additional 2/3 cup maple syrup, and stir to blend.
- Put back on the foiled pan and bake 20 minutes more
- Allow mix to cool on pan without stirring.
- When cool, crumble lightly leaving some granola clusters intact.
- Store in an airtight container.
