Chicken and Rice Soup (slow-cooker) is my recipe of the day with #NationalSlowCooker Month. Each day this week there will be postings from associated bloggers, including myself.

Today, my recipe was developed using chickpea and lentil rice which I received from Banza brand.
This is the first time I have used rice formulated from chickpeas or legumes. I was amazed at how fast and easy it cooks compared with long grain rice.
It added a great texture to the soup, which I made using a whole chicken and deboning after the cooking process. It is all very tasty and is the perfect cozy soup for a cold winter’s day.
Oh and guess what? We get snow this Saturday (yeah, like 2/10 of an inch). I know other people have been getting hammered while it is close to not being winter here at all. It readily demonstrates how global warming works- which is not to make every place warmer, but to make it just warm enough in the polar regions to effect change in the atmospheric patterns which cause climate change from changing the weather patterns.
So some places will be colder and others warmer. Especially bad if you happen to be a fish or a coral reef. Or a glacier.
But back to food. (I can really get going on issues in the press…)

Chicken and Rice Soup (Slow Cooker)

Slow Cooker Chicken & Rice Soup
Equipment
- slow cooker
Ingredients
- 5- pound whole roasting chicken
- 1 large onion chopped
- 3 carrots sliced
- 2 ribs celery sliced
- 1 tablespoon chopped garlic
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried marjoram
- 2-4 teaspoons salt
- 2 teaspoons black pepper
- 8 cups boiling water
- 8- ounce package Banza rice made from chickpeas
- 1-1/2 tablespoons minced Italian parsley
Instructions
- Place all ingredients (except rice and parsley) in the slow cooker and top with the boiling water.
- Cover cooker and cook on low for 6 hours.
- Remove chicken; Strip meat from the bones and discard the skin and carcass.
- Chop the meat into bite sized pieces and add back to the cooker along with the rice and chopped parsley.
- Cover and continue to cook on HIGH for 10-15 minutes or until rice is tender.
I didn’t realize Banza had rice. The soup sounds wonderful, as always.
Two different kinds of rice. Check Target. It cooks really quick too, like Minute rice. Perfect for the slow cooker.
I have yet to try using rice in my slow cooker…maybe I should do something about that? Yes, I’m pretty sure I should!!!
