Slow Cooker Fiesta Chicken Sandwiches
The fiesta chicken sandwiches essentially are a slider version of chicken soft tacos.
Piling the cooked tender and juicy chicken on top of a freshly warmed bun is just heavenly. In some ways it reminds me of the Latin American torta milanesa, albeit that is made with breaded fried chicken and will have a refried bean base.
For this one I wanted something simpler and easier.
Chucking the chicken into the cooker and covering with sauce could not be moreso. And the rolls warm in my convection oven in about nine minutes.
Perfecto.

Fiesta Chicken Sandwiches
Equipment
- slow cooker
Ingredients
- 2-1/2 pounds boneless chicken breast
- 1 cup mild or medium jarred salsa
- 2/3 cup tomato juice
- 1/4 cup pickled jalapenos chopped
- 1 ounce packet taco seasoning
- 1/4 cup minced fresh onion
- 1-1/3 22 ounces each full package packages Rhodes Warm & Serve Soft White rolls (count 16 rolls)
- shredded lettuce as desired
- diced tomatoes as desired
- finely shredded cheddar cheese as desired
- salsa casera or other spicy taco sauce optional, as desired
Instructions
- Place chicken breasts in slow cooker.
- Stir together the salsa, tomato juice, jalapenos, taco seasoning, minced onion and pour over the chicken.
- Cover slow cooker and cook chicken on low for 4 hours.
- Shred chicken with forks and toss with sauce in the crock.
- Prepare/warm Rhodes rolls according to your preferred package directions.
- Slice and fill with shredded chicken, adding toppings and spicier salsa as desired.
These look colorful and amazing! And I’m jealous of your warm & serve rolls…I could only find the Thaw, Rise, & Serve variety…a lot more time consuming! Well, if you call remember to take them out of the freezer time consuming!!!
