Diwali is the Hindu Festival of Lights and goes on for 5-6 days beginning October 24th. Celebrants eat a variety of foods (as with all holidays everywhere).
The main foods are sweets and snacks, however. I decided to share my recipe for chicken tikka pizza, which I love.
Specialty Ingredients:
I am pretty sure you can get most of these ingredients in any ordinary grocery store without much trouble. You can find packaged nan flat bread. Same with the butter chicken sauce.
The Rajah spice might be harder to find, but I do have a scratch recipe you can use: Tandoori Spice. It’s pretty much dead-on for the Rajah spice, which I love. I also noticed Emeril Lagasse using that brand on television before.
If you can’t get paneer, try using queso blanco cheese or a very firm tofu, preferably pressed and/or frozen to improve the firm texture. I even have some pointers on doing prep on the tofu in my recipe for Mala Tofu Bites.
So you really shouldn’t have any trouble getting this together at all. And it is really delicious.

We had a slow cooker chicken tika masala the other night. I wish I had that recipe then. It would be perfect with the leftovers. Next time I’m making extra to plan for this pizza as a follow up meal.
So delicious! 5***** My family loved it, can’t wait to make it again!!
That looks good Sue. I like the addition of Tandoori masala spice powder here
my question is how can you thin yogurt? would you thin the yogurt–with water, for this recipe, or with something else? please explain. thanks.
Some I use thick but when I want it thin, add a little milk or water and stir. It should drizzle sort of like Ranch dressing.
Milk or water works.
Sue what a wonderful idea to use naan bread as a pizza base. And you’ve given me an excellent idea…make chicken tikka one for hubby and for myself paneer tikka one. A filling dinner option and for parties too.
