Baked Garlic Cheese Grits is my recipe of the day with the blogging group Sunday Funday. We group together once weekly to share recipe posts on varying topics. This week we present some Spring brunch recipes. Mother’s Day is coming up and breakfast with Mom is always popular. And who doesn’t enjoy a nice brunch?

Baked Garlic Cheese Grits

 I chose baked grits casserole for my selection. Garlic and cheese flavor this southern grits casserole. Then it is baked to perfection. Every good country breakfast should include it. I know this recipe made my husband a believer in grits!
Many grits recipes are plain and meant to be served sweet or not depending on personal preference. But this grits recipe bakes them with cheese and garlic building tons of flavor right in. They’re a tasty addition to your breakfast or brunch. And you may find yourself going back for a little extra serving, they’re that good!
I like grits alongside a country breakfast with meat such as bacon, ham or sausage, eggs, biscuits, and country gravy.
Plus coffee is pretty much mandatory. Am I right?

Ingredients
  

  • 1 cup quick cooking grits
  • 2 cups chicken broth
  • 1 teaspoon minced garlic
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 4 tablespoons butter
  • 4 ounces Cheddar cheese
  • 4 ounces American cheese
  • 2 eggs (lightly beaten)
  • 1/4 cup milk
  • 1/2 cup Extra shredded cheese (optional)

Instructions
 

  • Place the grits, chicken broth, garlic, salt and pepper in a saucepan and bring to a boil.
  • Cook, stirring, over moderate heat until mixture thickens.
  • Take off the heat and stir in chopped or shredded cheeses with the butter until it all melts and incorporates.
  • Whisk together the eggs and milk, then quickly whisk that into the grits.
  • Pour mixture into a buttered baking dish (square or rectangular) that holds about 6-8 cups.
  • Top with more shredded cheese if you like, but it doesn’t need it.
  • Bake at 350F for 40-50 minutes or until a knife comes out clean and it is set.
