Sausage, Green Beans and Potatoes is my recipe of the day with the blogging group Sunday Funday. We post weekly on varying topics. This week we’re featuring recipes with beans. Glad you could join us!

Sausage, Green Beans and Potatoes

I took inspiration for today’s post from a large can of Italian green beans I happened to have on hand. Italian (or Romano) green beans are wider compared to typical string beans or pole beans. Another difference is a subtle nutty flavor as well.

I thought they would go well with smoked sausage I also had and some creamer potatoes. The larger size of the Italian beans paired well with the chunks of sausage and halved potatoes.

Boiling the potatoes in water with some chicken bouillon adds a little extra flavor to them. And reserving some liquid to use in the final dish reinforces it.

Add a few select seasonings and you have a delicious and hearty side dish.

Ingredients
  

  • 6 cups water
  • 2 tablespoons chicken bouillon powder
  • 24 ounces creamer potatoes halved
  • 1 cup chopped onion
  • 2 teaspoons minced garlic
  • 1 teaspoon dried marjoram
  • 18 ounces smoked sausage chopped
  • 1 tablespoon oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon black pepper
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoons sugar
  • 29 ounces can Italian green beans drained

Instructions
 

  • Boil potatoes in water and chicken bouillon 10 minutes and drain, saving 2 cups broth/water.
  • Let broth cool and whisk in 2 tablespoons cornstarch.
  • Saute smoked sausage, onion, garlic, and marjoram in oil until onions soften.
  • Add vinegar, black pepper, Worcestershire sauce, and sugar.
  • Add broth/cornstarch mix and allow to thicken.
  • Stir in drained green beans and cook until hot.

    • They are wide and flat. Also known as romano beans although packaging will only say Italian beans.
