I love a good, easy baked fish dish that I don’t have to drown in butter. In this recipe adding the flavors of pesto, cheese and capers along with a squeeze of lemon is all it needs. Paired with a tossed salad and a side of cauliflower rice, this is a perfect healthy meal for slimming down, reducing carbs and fats and keeping in tune with Lenten meat fasting. Other interesting sides for this could be things like lemony orzo or a wild rice mix, maybe with some roasted asparagus.

Mediterranean Baked Cod

Weight Watchers: 3 Smart Points per serving
Ingredients:
- 8 ounces cod loins
- 1 tablespoon sun-dried tomato pesto
- 2 tablespoons reduced fat feta cheese, crumbled
- 2 teaspoons small capers
- salt and pepper
- garlic powder
- lemon slices
Method:
- Place fish on baking sheet and spread with sun-dried tomato pesto, and top with feta cheese, capers, salt, pepper and garlic powder.
- Bake at 400ºF for 17 minutes or until fish flakes easily (time depends on thickness).
- Serve with lemon slices
