Mexican Grilled Shrimp Skewers is my recipe of the day. Generally these are known as  camarones a la plancha,  or shrimp cooked on the flat iron griddle. I  don’t have an outdoor griddle.  (sob!)

Mexican Grilled Shrimp Skewers (aka Camarones a la Plancha)

I love shrimp  done on the barbie so you know  I  will do that  if I can. In colder weather or rain, I will bring it inside and do these the traditional  way. On the stove on a griddle or  you can also  use a griddle  or   grill  pan. Of course, inside, you  probably won’t need the skewers. Or outdoors either if you use a grill basket.

If  you do use skewers, it’s best to soak them overnight, holding them down under water with a weighted  plate or something. Soak plenty.  The  unused ones dry well  for next time,  or you can place soaked skewers in a ziplock bag  in the freezer to be presoaked and ready. Clever trick, eh?

Equipment

  • outdoor grill or indoor griddle

Ingredients
  

Skewers

  • 1 pound jumbo shrimp (15-20 count)
  • Prepared Garlic Bread (optional)
  • skewers (wooden ones soaked or use metal ones)

Marinade

  • 3 tablespoons olive oil
  • 3 tablespoons fresh lime juice
  • 2 tablespoons minced garlic
  • 1/2 teaspoon ancho chile powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes

Instructions
 

  • Peel and devein shrimp, leaving the last tail section intact
  • Soak wooden skewers (best done overnight) or use metal ones.
  • Mix up the marinade, marinate shrimp 30 minutes.
  • Skewer shrimp and grill several minutes on each side, basting with extra marinade. You can griddle or cook inside in a skillet if you prefer.
  • Serve hot, with toasted garlic bread.

    This Mexican shrimp skewer recipe is a great way to add a delicious and mildly spicy flavor to your next meal. The recipe is easy to follow, and the end result is a plate of delicious and flavorful shrimp skewers. I served this up with Elote Corn and yum… They went very well together.
