Spicy Huevos Grilled Cheese is my recipe of the day with the blogging group From Our Dinner Table. We get together weekly to post on various food topics. This week we are discussing Brunch recipes.
I wanted to explore alternatives to the obvious breakfast burritos. Since I love the flavors but get tired of the same old thing.
I thought to convert the tortilla to bread and make a grilled cheese, since I already love toasted bread at breakfast. Plus I always adore a grilled cheese.
Although I was certain I would love this, it turned out even better than I expected.
I loved all the gooey cheese and the brush of sauce was just right (I used a taqueria habanero sauce, but choose the spice level right for you).
Accompanied by some fresh fruit, such as pineapple, this turned out to be a very tasty breakfast. Best part being that it wasn’t the same old same old.

Spicy Huevos Grilled Cheese
Equipment
- griddle or frying pan
Ingredients
Huevos:
- 3 large room temperature eggs (lightly beaten)
- 2 tablespoons chopped green chillies
- 2 tablespoons cotija cheese
- 1-1/2 teaspoons sour cream
- salt and black pepper (to taste)
- 1 tablespoons butter
Sandwiches:
- 10 slices bread
- 2-1/2 cups shredded cheddar cheese
- 1/3 cup hot taco sauce (smooth type, not chunky)
- soft butter (as needed to brush bread)
Instructions
- Whisk together the eggs, chillies cotija, sour cream, salt and pepper.
- Heat butter in a small skillet and add egg mix, cooking until eggs set, stirring occasionally.
- To build the grilled cheese, take one slice bread, and brush the inside lightly with hot taco sauce.
- Top with 1/4 cup cheese, then 1/4 cups of scrambled egg, then another 1/4 cup cheese.
- Brush the other slice of bread with taco sauce and top the filling.
- Brush the outsides of the bread with soft butter and griddle over moderate heat until golden and crisp.

These sammies made for a tasty dinner item! The eggs came out silky smooth and flavorful. In addition to green chilies, I also added chopped tomatillos I had on hand which provided some extra yummy.
