Chipped Beef on Toast

My recipe is a retro classic. I am not entirely certain, but I think it originated in WW2 as a military food. Possibly because dried beef was easy to ship along with troops.

It has always been loved, despite the rude moniker of “SOS” which describes it as “slop on a shingle” or perhaps another “S” word more uncouth than that. One that inspires giggles and takes absolute bravery to stand up to the name with a smile and a clean plate.

I’ve noted in the recipe and will here as well that the jarred beef is saltier than the little packets of thin beef you can get in the deli. So don’t add salt until tasting the gravy after you add the beef. You can always add more but you can’t take it out. I don’t care what people say about adding sugar, potatoes or old shoes to remove salt or cayenne pepper. Those are old wives tales as the saying goes. 😉

Ingredients
  

  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 4-1/2 ounces dried chipped beef (1 jar Armour dried beef, chopped)
  • 1/2 teaspoon black pepper
  • 1 teaspoon Cajun seasoning
  • 6 slices toast or biscuits

Instructions
 

  • Heat butter in a skillet and add flour, stirring until well mixed.
  • Cook for a minute or two to cook out raw flour flavor.
  • Add black pepper and Cajun seasoning along with cold milk all at once.
  • Stir until mixture begins to boil (over low heat).
  • Add beef and allow to boil one minute and thicken.
  • Serve gravy mixture over toast points (cut diagonally in half) or biscuits, as you prefer.

  1. The recipe sounds good, especially with Cajun seasoning. But how much milk is used for the gravy. I don’t see it listed in with the other ingredients.

    • Sorry about the typo. It should be 2-21/2 cups whole milk. Start with 2 adding the other half cup if it is too thick.
