Sauerkraut with Tomato Sauce is my recipe of the day for the food blogging event Fall Flavors. I am posting on Monday and Wednesday of this week and will post again on Friday along with a bunch of other recipe bloggers.

I am sharing a recipe for flavored sauerkraut done in a slow cooker. It has bits of meat, potatoes, kraut, cabbage and tomato in it.
Not overly meat heavy, it is not so much a main dish in itself. But you could serve this with something like pork chops. Or smoked sausage. Maybe even add a bit more meat.
I like this with sausages personally. Some brats or metts done up on buns. And maybe some German potato salad on the side too.

Sauerkraut with Tomato Sauce
Equipment
- 1 slow cooker
Ingredients
- 1 pound bulk fresh bratwurst casings removed
- 1 large onion chopped
- 3 medium russet potatoes peeled and thinly sliced
- 15 ounces canned sauerkraut drained, juice reserved
- 12-14 ounces shredded green cabbage
- 8 ounces Spicy V-8 juice
- 8 ounces tomato sauce
- 1 tablespoon chopped garlic
- 1 tablespoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Brown and crumble bratwurst with onions in a skillet until cooked through.
- Place a liner in the bottom of the crockpot. Layer half the potato slices across the bottom, then top with half the sauerkraut and repeat.
- Pour the browned meat and onions over that.
- Top with shredded cabbage.
- Whisk together the reserved kraut juice with the V-8 juice, tomato sauce, garlic, paprika, salt and pepper. Pour this over all.
- Place lid on crockpot and cook on low for 8-10 hours, stirring at the end to test the potatoes (done when potatoes are tender.)
