Broccoli Cheddar Chicken Casserole is my recipe of the day with the blogging group From Our Dinner Table. We group weekly to post new recipes on a variety of common topics.  This week we are sharing recipes for easy casseroles.

Broccoli Cheddar Chicken Casserole

I chose to make a copycat version of the Cracker Barrel chicken and broccoli casserole. Once very recently, I was going to order some for takeout and found it had disappeared.

Disappointed, but still wanting a comforting casserole with the crunchy topping, I set out to make it myself.

I served this casserole over rice as it seemed appropriate. With a salad on the side and some dinner rolls, this made a nice rounded out meal.

  • 1 13x9-inch casserole dish

Ingredients
  

  • 1-1/2 pounds boneless chicken breast
  • 8 ounces fresh broccoli chopped
  • 10.5 ounces canned condensed cheddar cheese soup
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 3 ounces Ritz crackers crushed into crumbs
  • 3 tablespoons melted butter
  • 1-1/2 cups shredded cheddar cheese

Instructions
 

  • Preheat oven to 350F.
  • Spray a 13"x9" baking dish with nonstick cooking spray.
  • Cut chicken breasts in half lengthwise, into thin cutlets.
  • Slice uncooked chicken cutlets into strips.
  • Stir milk into soup with salt, pepper and garlic.
  • Layer chicken, broccoli, soup mixture, and grated cheese in the casserole dish.
  • Cover with foil and bake for 45 minutes.
  • Toss cracker crumbs with melted butter.
  • Remove foil from the casserole dish and sprinkle top of casserole with the buttered crumbs.
  • Bake for another 15 minutes (with no foil) until crumbs are golden.

  1. My husband will love this! I’ll eat it without the rice to watch my carbs. It sounds wonderful either way.

    • Grated some cauliflower and saute it just a little bit where its still firm but not gone mushy. As long as having both brox and cauli don’t become too many cruciferous veggies for you at once.
