Now that Spring has arrived, we can set our minds towards warmer weather things like Easter, picnics, baby and bridal showers, picnics and tea parties. Well, baby showers happen all the time, but most of the bridal showers occur during warm weather, I think. June is traditionally the month for brides, going way back many moons, and it will be here before you know it.

This is a great and simple recipe to put together and you can get the items from your grocery deli counter if you like. Or maybe you have some leftover Easter ham or potato salad. These would even be nice on the Easter table as bite sized appetizers. And they look easy enough but my special trick is getting the chives to tie into a little knot without snapping or breaking.

These are also very easy to make ahead if you want to get things ready for a party or shower, and transport well to picnics as long as you keep them chilled.

I can’t believe it’s going to be April in a few days. Time has flown for me this early part of the year. April is promising to be a very busy blogging month for me with  posts going up every 2 out of 3 days on the calendar so far. The third week of April is a little more quiet with  only the #FishFridayFoodies event scheduled so far. And the last week of April is reserved for #RecipeMakeover. Ham Pinwheels with Potato and Cheese

Ingredients:

  • 1 pound (16 one ounce slices) smoked ham
  • 1 cup prepared potato salad
  • 1 cup shredded cheddar cheese
  • 32 fresh chives or frilly toothpicks (I used garlic chives in mine)

Method:

  1.  Lightly mash potato salad with a fork to remove big lumps.
  2. On each one ounce slice of ham, spread one tablespoon of potato salad, then sprinkle with cheese.
  3. Roll ham up tightly around filling, then cut in half.
  4. Tie with a fresh chive (I microwave mine slightly so they wilt a little bit which makes them easy to tie into a knot without breaking) or alternatively, stick them with a frilly toothpick.
