Slow Cooker Irish Stew with Guinness

My recipe of the day is for Irish stew with Guinness, made in the slow cooker or crockpot using lamb, for which today the theme is about St. Patrick’s Day recipes.
If you’re not a fan of lamb (and some people are not) this can also be made with stew beef.
Guinness is also not the only stout ale you can use in this, although it is the most popular Irish one. Time was that was mostly all you could get, but the craft beer movement has really opened that one wide.
There are a variety of root vegetables in this as well, but don’t stress if you can’t find every single one. You can mix and match on the quantities of potatoes, celery root, parsnips, turnips and carrots. This is root vegetable rich and you can use whatever types you like. I also used the larger boiler onions (big pearl onions) but you can just use chopped or wedges of onion if you like. The round shape is mostly for aesthetics.

Slow Cooker Irish Stew with Guinness
Ingredients
- 2 pounds boneless leg of lamb cubed
- 1 pound boiler onions or pearl onions peeled and left whole
- 1 whole garlic peeled and cloves separated
- 1 tablespoon fresh thyme leaves
- 1 tablespoon dried snipped chives
- salt and black pepper
- 1/4 cup all-purpose flour
- 1 pound potatoes peeled and chopped
- 1 pound celery root trimmed and chopped
- 8 ounces parsnips chopped
- 8 ounces turnips chopped
- 8 ounces carrots chopped
- 1 cup vegetable stock or beef stock
- 2 tablespoons Worcestershire sauce
- 1 teaspoon Kitchen Bouquet optional
- 16 fluid ounces Guinness stout ale
Instructions
- Trim visible fat from lamb, pat completely dry and cut into chunks.
- Place the fat trimmings into a large skillet and cook until fat renders out, then discard the solids.
- Add lamb, onions and garlic to the pan along with thyme, chives, salt and pepper and saute until onions are browned and lamb is seared. Toss mixture with the 1/4 cup flour.
- Place vegetables in the bottom of a large crock pot.
- Place floured lamb and onions on top of that.
- Pour stock and Guinness stout over all.
- Cover and cook on low for 8-10 hours or until vegetables and lamb are tender.
Now that is definitely my kinda recipe, Sue! Savory, meaty. Wow. I can’t wait to make a beef stew this week.
