Hurray! Pakistani Chapli Burger is my recipe of the day  with  Burger  Month. This  is my third and last burger for the event. For this burger  I wanted to  make something out on the grill fashioned after a Pakistani chapli   kebab,  which  is a  beef patty chock full  of  aromatic Asian spices.

I had  one  of these   yum burgers recently when  our usual Indian restaurant was closed and we needed to  improvise. A new Pakistani restaurant down the street  had opened that we’d never tried, and they were offering  curbside service.

Although their kebab was not served on bread, we did have some nan bread on  the  side.  I adored  the grilled tomato that  went with it and all the  spicing. I knew right then and there that although  I thought  I was going to make a different  burger for Burger Month,  I needed to waltz back  to the form and update it to my newest burger love.

Burger loves  may come and go, but the newest burger romance will always rule.

If you recall, I’ve made a Middle Eastern type burger before that looks similar to this because of  the bread, but they really do taste a bit different.  The kotlet kubideh burger is very mild and Persian tasting. This one has a bit of curry flavor and is spicy as well. But  you can  leave out  the  chilies if you want  to tame it.

On a side note, I’d have  given you an affiliate  link to  buy the  bread but I noticed they are price gouging and didn’t feel like being complicit  with  that. But  the bread  looks like this. Expect to pay around 3.99 a pack, and not 20.99 like some third  party thief is selling  them  for on Amazon. I left them a nastygram in  their reviews. Amazon needs to kick them off.  j/s

Ingredients
  

Chapli Kebabs:

  • 1 pound ground beef
  • 1 teaspoon fennel seed
  • 2 teaspoons ground coriander
  • 1-1/2 teaspoons ground cumin
  • 1 teaspoon amchur or mango powder (has a very lemony taste)
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon chopped garlic
  • 1 tablespoon fresh grated ginger
  • 1/3 cup minced onion
  • 4 hot green chilies chopped
  • 2 tablespoons gram flour (chickpea flour)

Burgers:

  • 8 small Stonefire Nan rounds (or other flatbreads, cut to size)
  • 4 thick slices beefsteak tomato
  • lettuce, sliced red onion, fresh cilantro (optional toppings)
  • green chili chutney and/or tamarind chutney (preferred sauces)

Instructions
 

  • Mix ingredients for kebabs and let stand fifteen minutes.
  • Shape meat into four patties.
  • Chargrill on an oiled mesh grate (the type where the meat won't fall through) until meat is done to your liking, preferably charred somewhat.
  • Serve kebab on warm griddled nan rounds with lettuce, tomato slice, cilantro leaves, slices of onion and chutneys of choice,
  • The tomato drips, so have a napkin ready.
