I often look for ideas to use up a roasted chicken since the two of us usually don’t eat all of it at one sitting. I actually like having extra chicken around since it makes for a quick meal. This is my version of wanting a chicken sandwich with a little bit of Asian satay flavor along with the mild heat of sriracha.

Perfect wrapped up for a brown bag lunch. I hope you enjoy-

Ingredients

For the Sriracha Chicken:

  • 1 pound cooked boneless chicken breast (chopped)
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha sauce
  • 1 tablespoon grated ginger
  • 2 teaspoons toasted sesame oil
  • 1/4 cup chopped red onion
  • 2 tablespoons toasted sesame seeds
  • 3 tablespoons creamy peanut butter
  • 1/2 cup finely diced celery
  • 2 teaspoons rice vinegar
  • 1 teaspoon sugar

For Making the Wrap:

  • whole grain wraps
  • lettuce
  • tomato
  • sliced avocado
  • chopped peanuts

Instructions

  • Stir together all ingredients for the chicken salad and chill.
  • Serve inside a wrap with other optional  ingredients as desired.
