My recipe for today is cranberry jalapeno turkey roll ups, which are easy to make pinwheels with a spicy cranberry cheese spread, meat and a bit of spinach.
I like to make these ahead of time roll in plastic wrap and keep in the fridge to have ready for packed lunches in the morning. They are easy to slice into bite sized chunks or eat whole, like a pseudo-burrito wrap.
You can make these using deli sliced turkey, or turkey leftovers from Thanksgiving, or even utilize another type of meat.
Besides being good on the roll-ups, the cheese spread is also very good on crackers, as an appie.

Cranberry Jalapeno Turkey Roll-Ups
Cranberry Jalapeno Cream Cheese Spread Ingredients:
(Yield one cup)
- 4 ounces cream cheese (at room temperature)
- 2 tablespoons jellied cranberry sauce
- 2 tablespoons mayonnaise
- 1 teaspoon Louisiana hot pepper sauce
- 1/2 teaspoon ground jalapeno pepper
- pinch salt
Roll-Ups Ingredients:
- 8 flour tortillas
- 1 cup dried sweetened cranberries, minced
- 12 ounces thinly sliced roast turkey
- 2 cups baby spinach leaves
- plastic wrap
Method:
- Combine cream cheese spread ingredients in a food processor and puree until smooth.
- For each wrap, place a tortilla on a sheet of plastic wrap.
- Top with 2 tablespoons of cheese spread, 2 tablespoons minced dried cranberries, 1-1/2 ounces sliced turkey, and 1/4 cup baby spinach leaves.
- Roll each tortilla up tightly, then wrap the plastic around it and refrigerate until the wraps firm up.
- Slice into sections, like sushi, and serve.
