Chickpea Falafel Salad  is my recipe of the day with the blogging group Foodie Extravaganza. Each month we share recipes that follow a theme of a Food Holiday or other culinary celebration. This month we are sharing Vegan recipes.

Chickpea Falafel Salad

I opted for a mash of chickpeas with seasonings for falafel, which I love. You can use either vegan yogurt or Greek yogurt depending on your dietary prefs.

Other options for this as sandwich toppings include lettuce and tomato, middle eastern pickles, harissa, tahini sauce and chopped parsley. I ate it without these and still loved it. Although I do love a hot pepper paste. (Not all of those will be labelled harissa).

You can also serve this on warmed or toasted pita. For a real falafel sandwich effect. Either way is good.

Ingredients
  

  • 15.5 ounces canned or cooked chickpeas drained and mashed with fork
  • 1/4 cup tahini
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/8 teaspoon ground cayenne pepper
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/4 teaspoon mild paprika
  • 1/2 teaspoon garlic powder
  • 1 tablespoon toasted sesame seed
  • 2 tablespoons plain or Vegan dairy-free yogurt or plain Greek yogurt

Instructions
 

  • Stir ingredients together and chill.
  • Serve on toast or sliced bread for sandwiches. Or on lettuce or with crackers as other options.

  1. Many in the vegan community make a similar salad but with added chopped sheets of nori to mimic the seafood flavors of tuna salad. Your salad looks very tasty, Sue!

    • I have some Furikake seasoning from Trader Joe’s that has chopped nori, sesame and kelp. I haven’t tried it with chickpeas but sesame goes great with that so I imagine it would be good too. It’s also vegan.

  2. This is an interesting sandwich filling. Our daughter, Nicole and her husband, Pierre love Falafal. Perhaps I will make this salad and serve it with crackers or mini pitas as an appetizer next time they visit.
