This is an easy recipe I put together for my family to have on a weeknight, at the same time ditching the usual potatoes for something a bit lighter. It is quite the comfort food for us and I can make quick work of getting this to the table with perhaps just a tossed salad to go with.

If I am in a hurry, I can get turkey from the market deli, or as well, I can use extra turkey from a roasted turkey breast. It need not be sliced as thinly as delis do, as a thicker more rustic slice is just as welcome. In the same vein as the deli meat, you can also choose to use a bottled gravy if you are in a rush, or reach for you stash of frozen gravy or broth (from which you could make gravy yourself with a bit of thickener).

This is not totally low carb as there is the thickener in the gravy whether you make it yourself or buy it. But it does cut back, and that is a sometime good thing.

The cauliflower is oven roasted, and if you are in a rush there, you can make that ahead of time as it does hold well in the fridge, and you can also freeze it. But the half hour roasting time really isn’t that big a deal to me.

Ingredients:

12-16 ounces thinly sliced oven baked turkey breast
4 slices sandwich bread
12 ounces turkey gravy, prepared
1 recipe mashed roasted cauliflower (click on title to see recipe)

Method:

Prepare caulflower mashed potatoes and set aside.
Heat turkey and gravy (separately.)
On a slice of sandwich bread, place a mound of cauliflower mashed, top with slices of turkey and cover all with gravy.
