Combining these two I am posting an unusual recipe for German Chocolate Sauerkraut Baked Donuts- in homage to the Ohio Sauerkraut Festival in my part of the world, which has been held annually the second week of October for decades. Attending the kraut festival or cooking sauerkraut is a tradition for me at this time of year.
Now I understand that most of you like cooking kraut as well, and usually that is with some type of pork.
When I moved to Ohio (coming up from Florida so the hubz could get his Masters Degree completed) we started attending the festival in Waynesville. At the time I was a little bit shocked to see some of the creations they were making, and trust me, they made them all.
At first it was a dare to sample some of these foods, but later we ate them out of love. And what kinds of foods? Here are a few in case you are on the hunt for some of the things they make, or my versions of it:

They also serve (famously) chocolate fudge made with sauerkraut (which is a bit like coconut in there) as well as their versions of donuts which aren’t chocolate) (and theirs are fried) but you can be sure I will get to them all in good time, as well as creations like the German Chocolate donuts today.

German Chocolate Sauerkraut Baked Donuts
These are not baked totally from scratch.
I understood that some will see (Sauerkraut!?!?!?) and have trepidations so wanted to keep things as easy as possible to help encourage you to try.
I know, I know. I was once a first-time sauerkraut dessert person myself, so I know exactly what you are thinking. And how hard it must be to wrap your head around the concept.
But you are going to have to just trust me on this. You can’t taste the sauerkraut per se. It does add a little tang to the donuts (the way using buttermilk will add tang to a baking recipe). Just try to imagine how flavors can disappear in something, the way zucchini can inside of zucchini quick bread. The kraut does help keep things moist and tender, and the sensation of texture will hide itself as if you are eating coconut, which is in the frosting anyway.
In fact, the taste is so well hidden, that those who were not told it was in there had no idea.
But I wasn’t the sneaky one (my hubby did this to the guys at work) although there was the time my brother said he would NEVER eat okra willingly so I cooked some for him and he wolfed it down. I asked him how he liked it and he said “delicious.” Then I gave him the memo and the look on his face was priceless. It did prove out my point that if you don’t like something, it probably hasn’t been cooked well.
And a couple of things I know for certain: I know how to cook okra properly and I am a self-proclaimed sauerkraut queen. If you don’t think these donuts are delicious, I haven’t done my job, and so far, the votes on these are all thumbs up.

German Chocolate Sauerkraut Baked Donuts
German Chocolate Sauerkraut Baked Donuts
Equipment
- 3 (6-count each) regular donut baking tins
Ingredients
- 1 15.25 ounce box German Chocolate cake mix (I used Pillsbury)
- 1 cup milk
- 1/2 cup coconut oil
- 3 large eggs
- 1 cup sauerkraut
- Baker's Release spray Baker's Joy
- 1 15 ounce tub Coconut Pecan Frosting
- 1/2 cup finely chopped toasted pecans
Instructions
- Preheat oven to 350F.
- Spray donut baking tins with baker's release spray and set aside.
- Place cake mix, milk, coconut oil (vegetable oil is fine) and eggs in a mixer bowl and blend until smooth.
- Rinse sauerkraut with cold water in a mesh strainer. Taking small handfuls, squeeze it as dry as you can.
- Add the kraut to the cake batter and fold in.
- Divide batter among baking tins (using a heavy duty ziplock with the corner snipped can be helpful to dispense the batter).
- Bake about 17 minutes or until it tests done with a toothpick. It does have a much shorter baking time than cake because the batter amount is small.
- Cool in pans ten minutes then turn out and finish cooling donuts on a wire rack.
- Spread with frosting and sprinkle with pecans; let set up to dry if you like but these will not be totally dry to the touch anyway because of the frosting type.

It is a thing, isn’t it? I hated sauerkraut when I was a kid- my mom would just dump the can into the pot and stir. If Bill had not wanted some after we got married I probably would never have cooked it again, but then I did, for him. And it was like someone turned a light on. I took the ball and ran. Bless my Mom, she was a good cook in her own right, but NOT cooking kraut. LOL!
I have been eagerly awaiting this recipe and am anxious to try them but now you have me very hungry for sauerkraut that tastes like sauerkraut LOL

I’ve never heard of sauerkraut in baked goods, and I’m PA Dutch (German). I’m a little scared to try it, but if you use it in your recipes, it has to be good. I’ve never tried a Palatable Pastime recipe that wasn’t delicious!
You definitely won’t taste it. It is just key to rinse it well and squeeze it dry. The scariest one for me to try the first time was the chocolate fudge. Couldn’t taste it in that either- it just seemed like the texture of coconut. The only thing I’d say about the one I tried is I make better chocolate fudge than them so I guess I should just hop to it. I don’t make fudge every year and usually only at the holidays but maybe this year.
Such fun ways to use sauerkraut! Hopefully we get to visit Ohio someday to see some of those festivals.
At one time the Ohio tourism would put out a calendar booklet of events- not sure if they still do that but it would list them all over the state in case you were on a road trip. The first one I ever got was moving up here and we stopped at a rest stop with a visitors center.
And of course, they look as heavenly as they sounded!!! I am so going to have to give this one a try!!!
