Chicken and Meatball Gumbo is my recipe of the day.ย  For a change andย  something a bit different,ย  I haveย  combined bonelessย  chicken breast with ready toย  cook meatballsย  inย  myย  gumbo. It’sย  delicious.

How toย  Make Roux

Of course,ย  I used a ready toย  go rouxย  in this as well.ย  If you findย  you cookย  with it often, it can save you a bit ofย  time havingย  a jar in the fridge. I knowย  you can buyย  jars inย  theย  market also,ย  but itย  really isn’t difficult toย  make andย  much better at home.

To doย  that, mix one part flourย  andย  one part cookingย  oil in aย  skillet. Then cookย  andย  stir constantly over low heatย  until it darkens to aboutย  the color ofย  peanutย  butter. For a dark roux, continue cooking until it looksย  more like melted milk chocolate. Coolย  and storeย  in aย  jar inย  theย  fridge You should be able to keep that a month or twoย  if itย  has not moldedย  or turned rancid.

Iย  will usuallyย  just make the light rouxย  and for those occasions I use a darkย  oneย  I will just brown myย  light roux further. Light roux takes about 8-10 minutes,ย  dark roux about 12-15. Andย  ofย  course that depends on the pan heat. So go byย  eye and not my minutes. Don’t try to save time and upย  the heat or you risk burning it. The good partย  about makingย  aย  jar fullย  is thatย  it isย  one trip. You can always freeze it too.

You canย  use whateverย  meatballs you like. Frozen are fine. Or if you haveย  some freezer stash meatballs you made yourself,ย  that’s great too. I use myย  own if I have them. But I am not afraid to buy a bag fromย  the market either.

I putย  okraย  inย  myย  gumbo. I love it.ย  You can omit but realize itย  helpsย  thicken.ย  After all, “gumbo”ย  means “okra”. If youย  omit the okra,ย  addย  more roux. I don’t really countย  onย  theย  gumboย  fileย  toย  thicken as I only addย  a sprinkle.ย  I doย  like the flavor. But it is notย  vital forย  yourย  stew toย  be bonafide gumbo.

Serve with steamed rice- a niceย  scoopย  in theย  bowl. You can stir that together in yourย  bowl or not. I don’t. It’sย  up toย  you. You might like aย  splash ofย  greenย  Tabasco onย  this. Iย  think the green sauce works better than regular red Louisiana sauceย  on this recipe. Butย  youย  may feelย  strongly about a particular type ofย  sauceย  you prefer.

Ingredients
  

  • 2 tablespoons vegetable oil
  • 1 large onion (chopped)
  • 2 tablespoons chopped garlic
  • 1 green bell pepper (chopped)
  • 2 ribs celery (diced)
  • 10 ounces fresh okra (sliced)
  • 2 teaspoons dried thyme
  • 12 ounces boneless chicken breast (cut into chunks)
  • 1/2 teaspoon each salt and black pepper
  • 1/2 cup prepared roux
  • 4 cups chicken broth
  • 1/4 teaspoon ground cayenne pepper
  • 1 tablespoon Cajun spice
  • 12 ounces frozen meatballs (thawed)
  • 3 scallions (chopped)
  • 1 teaspoon gumbo file
  • steamed rice as needed

Instructions
 

  • Saute the onion, garlic, bell pepper, celery, okra and thyme in oil until the onions soften.
  • Season chicken with salt and pepper then add to pan, stirring until chicken browns.
  • Add roux and stir to coat, then stir in the chicken broth, cayenne pepper, Cajun spice and meatballs.
  • Bring to a boil then reduce heat to low and simmer for 25 minutes.
  • Sprinkle with chopped scallions and gumbo file.
  • Serve with rice.
