Cranberry-Sage Breakfast Sausage

#CranberryWeek continues today with my offering for cranberry-sage breakfast sausage, which I thought might be an interesting addition to any holiday breakfast or brunch table. It is quite simple to make and much healthier than commercial sausage preparations which have additional fat added. So in its lean nature it does tend to cook more quickly- don’t overdo it or it will dry out. However, if you want a regular type sausage, you could add ground pork fat, or if that is difficult for you to find, you can also grind up some bacon in the food processor or meat grinder (some butchers also sell this outright).

Cranberry-Sage Breakfast Sausage

Ingredients:
- 1-1/2 pounds ground pork
- 1 cup fresh cranberries, minced
- 1-1/2 teaspoons salt
- 1 teaspoon black pepper
- 2 teaspoons poultry seasoning
- 2 teaspoons rubbed sage
- 4 teaspoons brown sugar
- 1/4 teaspoon nutmeg
- 3/8 teaspoon red pepper flakes
- 3/8 teaspoon onion powder
- 1/4 teaspoon ground ginger
- 1/2 teaspoon garlic powder
Method:
- Mince cranberries in a food processor by pulsing a few times or chop by hand.
- Combine cranberries with all remaining ingredients, mixing well.
- Form into patties and fry in skillet until cooked through, or alternatively, place sausage into casings to make links or use as bulk sausage.
