DIY Gia Russa Pasta Salad is my  recipe of the day for my  last installment in BBQ Week. I know I have shared a lot of bbq grilling recipes with you  in the  past, so thought this week might feature a few  side salads (besides  the hot dog relish which I love!)

This  one  is copied after some samples of pasta salad I was given at the market a few months back, I liked it so bought a bottle. Brought it  home and proceeded to figure it out.

Much easier  than figuring out   my husband or daughter. Or even my cats.

I  always start my detective work at the ingredients label and work  backwards. This tastes pretty close.

You  can change up the pasta salad as you prefer, but the dressing is the  main thing.

Don’t limit yourself to using this only  on  pasta salad either. Try it on  an Italian sub or grinder and see how you like it. Even a tossed salad  with  this is a  good idea. So many uses!

And did I  mention the  money it will  save you? I noticed the price  of groceries going up (again!) So anything I can make from scratch  to pinch and save always helps. Especially since we are on  furlough from normal work and trying  to  work  things out there until the pandemic subsides.

Ingredients
  

Dressing Ingredients: (makes 2 cups dressing~close)

  • 3/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1/2 cup water
  • 1/2 cup Romano or Parmesan cheese
  • 2 ounce jar diced pimiento peppers
  • 1-1/2 teaspoons Italian seasoning
  • 1 teaspoon granulated sugar
  • 1 teaspoon paprika
  • 1 teaspoon sesame seeds
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon poppy seeds
  • 1/4 teaspoon celery seed
  • 1/4 teaspoon garlic powder

Pasta Salad Ingredients:

  • 10 ounces dry rotini corkscrew pasta, cooked and drained
  • 6 ounces dry farfalle bow-tie pasta, cooked and drained
  • 6.5 ounce jar marinated artichoke hearts chopped
  • 2 ounce jar diced pimientos
  • 1 small zucchini diced
  • 1 cup sliced cherry tomatoes
  • 1/4 cup sliced black olives
  • 8 ounces pearl mozzarella
  • 4 ounces diced genoa salami
  • 2.5 ounces diced pepperoni
  • 2 tablespoons thinly sliced fresh basil
  • 2 tablespoons grated Parmesan

Instructions
 

  • Process dressing in blender, adding the olive oil through the chute in a stream.
  • Mix dressing with remaining ingredients and chill one hour.
