This salad is rather unique in that I didn’t come across it until we moved to Dayton Ohio from Florida in the early 1990’s. There was a restaurant down in Waynesville Ohio where we liked to go look at antiques (it was billed as the antiques capitol of the Midwest) called (at that time) Der Deutchler, that specialized in Amish and country home cooking, and also would have dinner buffets. Later on we’d moved to Waynesville after separating from the military, and at some point, which I no longer recall, the restaurant traded ownership and became Der Dutchman. Or maybe the name just changed overall. There was another restaurant up in Sugarcreek Ohio. Years later there was a fire at the Waynesville location and they chose not to rebuild, perhaps because of the close proximity to the Little Miami river, which often threatened to flood the land parcel each Spring.

Since that time, I notice the other restaurant locations have spread throughout Ohio and even in Sarasota Florida. I really don’t know for a fact if this salad is at those other locations or not. I don’t even know if this particular one is a salad common  to most Amish people. If you’ve been to one of the other locations, let me know in the comments if you have seen this kind of salad there. I’d never seen prepared salad with potato and macaroni mixed together before then. In all respects, it tastes like potato salad more than mac salad, but the noodles offer a nice texture. You’ll notice the dressing is not made from mayonnaise, although it is pretty easy to make. But even though it is mayo-free, do not assume this is something that is picnic friendly in that it can sit out. It must be treated with the same food safety you would give potato salad with mayonnaise in it. So if taking to the picnic grounds, please keep it on ice.

I’ve made it as best as I can remember the salad, but since it has been a few years now since I had it, my memory is not crystal on it. It does seem to taste the way my memory recollects. If you like something a little different, albeit not too different, this is surely a recipe for you. I hope you enjoy it as much as we do.

Potato-Mac Salad with Amish Boiled Dressing

Potato-Mac Salad with Amish Boiled Dressing
Ingredients:

  • 2 pounds Russet potatoes, peeled and diced
  • 10 ounces uncooked elbow macaroni noodles, cooked and drained
  • 1/2 cup frozen peas, microwaved for one minute
  • 1/2 cup chopped scallions
  • 4 hard cooked eggs, peeled and diced
  • 2 ounce jar diced pimientos, drained
  • 1/2 teaspoon smoked paprika

Boiled Dressing:

  • 1 cup milk
  • 1 tablespoon Dijon mustard
  • 1/4 cup sugar
  • 1/2 cup apple cider vinegar
  • 1/4 cup vegetable oil
  • 2 tablespoons cornstarch
  • 1 teaspoon celery seed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 egg plus 1 tsp water, whisked

Method:

  1. Cook macaroni according to package directions and drain.
  2. Peel and dice potatoes, then boil 15 minutes in salted water and drain.
  3. To prepare boiled dressing, whisk together the milk, mustard, sugar, vinegar, vegetable oil, cornstarch, celery seeds, salt and black pepper in a sauce pan.
  4. Bring dressing to a boil over low heat, stirring constantly.
  5. Take 1/2 cup of the hot dressing and stir 1/2 cup very cold water into it and stir.
  6. Add cooled dressing to the single beaten egg, stirring quickly to temper.
  7. Stir the mixture back into the hot dressing and cook about one minute more over low heat until it thickens.
  8. Stir together the dressing with the cooked potatoes, cooked macaroni, peas, scallions, eggs and pimiento.
  9. Chill before serving.

  1. I am a big fan of both potato and macaroni salad so this must be really good! I had to stop by to see what boiled dressing is. 🙂

    • The boiled dressing gives a taste not unlike having mayonnaise in it. I think that type of thing goes back years and years. It’s a good one to keep tucked away in the recipe box!
