This was perfectly wonderful with some organic kale I found at a new organic produce farm in Indian Hill Ohio. I like using pastured eggs in this, as they are lower in fat and cholesterol and have a rich flavor in the yolk. This goes nicely with pieces of toasted garlic cheese bread from a French peasant loaf.

Greek Omelette with Garlic Scapes, Tomato, Mushrooms and Feta
Wonderful flavor and so easy to make. Garlic scapes are the tops of garlic as it comes out of the ground, with the undeveloped bud. It has the texture of asparagus and scallion with a big garlic flavor.
Guacamole Deviled Eggs
A different twist on the picnic classic- not just guack in egg halves, but a blended mixture. You can garnish this with a slice of pickled jalapeno (or fresh!) or perhaps you’d like a sliced black olive. I like spicy, so I did these with jalapeno and it was not too hot. Fresh pepper slices might be hotter. Olives definitely mild. I always love a deviled egg- they are so high in protein and so very low carb. Having different ways to do them is always a plus, and I always love avocado with egg.
