I know. You are probably tired of seeing all the red white & blue food posted on the blogosphere over the Fourth of July holiday. But while the colors are appropriate for that, this is really good for breakfast, and it just so happens that blueberries and raspberries are in harvest season right now. So by all means take advantage of these lovely fruits while they are here! This has gotta’ be better than a Bowl of Battle Creek.

Caribbean Arroz con Gandules (Rice & Peas)
There was a recipe for arroz con gandules on the back of my can of pigeon peas. But I didn’t have the sazon achiote packets nor did I cook the rice in the mixture, and not the right amounts of ingredients and didn’t add any bacon this time, but I “made do”. Hope you like it- we thought it was good. Went swimmingly with some grilled jerk baby back ribs.
Jamaican Jerked Ribs (Baby Backs!)
Jamaican Jerked Ribs (Baby Backs!) combine two grilling favorites to make a delicious and flavorful entree sure to impress.
Kohlrabi and Cabbage Slaw
Kohlrabi is a wonderful vegetable that is related to turnips and cabbage. It makes a great addition to cole slaw. This recipe is quite quick and easy to put together if you use your food processor to shred the vegetables.
Oven Roasted Corn with Chipotle Butter
Quick and easy to make oven roasted corn with spicy chipotle butter- just pop the corn in the oven and you’re good to go, and the chipotle butter whizzes up in a snap in your food processor. And wait until you see how easy it is to shuck!
Greek Omelette with Garlic Scapes, Tomato, Mushrooms and Feta
Wonderful flavor and so easy to make. Garlic scapes are the tops of garlic as it comes out of the ground, with the undeveloped bud. It has the texture of asparagus and scallion with a big garlic flavor.
Spicy Sicilian Burger with Basil Mayo
Spicy Sicilian Burger with Basil Mayo is a flavorful change of pace burger with Italian flavors. Che buono!

Shahi Paneer Curry
This is a curry made with paneer cheese, which is very meaty and a great vegetarian option. You can probably get away with using peanut butter instead of cashew butter, but I do recommend the cashew for the flavor.
When I made this, I served it with bhindi masala curry and lemon rice, both some of my favorites! The bhindi makes a great entree as well, but I like to make a smaller amount and serve it with another type of curry, especially if that curry is light on vegetables.
Guacamole Deviled Eggs
A different twist on the picnic classic- not just guack in egg halves, but a blended mixture. You can garnish this with a slice of pickled jalapeno (or fresh!) or perhaps you’d like a sliced black olive. I like spicy, so I did these with jalapeno and it was not too hot. Fresh pepper slices might be hotter. Olives definitely mild. I always love a deviled egg- they are so high in protein and so very low carb. Having different ways to do them is always a plus, and I always love avocado with egg.

Thai Larb Soft Rolls

Delicious soft rice paper rolls filled with spicy chicken, rice noodles, and a deliciously spicy chili dipping sauce. Like Thai Larb but packaged in an easy to eat container. If you don’t have toasted rice powder that you have bought or already made, toast rice in a dry skillet until it is a nice nutty brown; then grind in in a spice grinder or coffee mill and use a sieve to strain out unground bits.
