This was my go to when my barbecue got rained out on the 4th. It’s really quick to put together, and also very economical as a little fish goes a long way. I served it with oven roasted corn and chipotle butter.

Poached Eggs with Sauteed Kale, Mushrooms and Chevre
This was perfectly wonderful with some organic kale I found at a new organic produce farm in Indian Hill Ohio. I like using pastured eggs in this, as they are lower in fat and cholesterol and have a rich flavor in the yolk. This goes nicely with pieces of toasted garlic cheese bread from a French peasant loaf.

I know. You are probably tired of seeing all the red white & blue food posted on the blogosphere over the Fourth of July holiday. But while the colors are appropriate for that, this is really good for breakfast, and it just so happens that blueberries and raspberries are in harvest season right now. So by all means take advantage of these lovely fruits while they are here! This has gotta’ be better than a Bowl of Battle Creek.
Caribbean Arroz con Gandules (Rice & Peas)
There was a recipe for arroz con gandules on the back of my can of pigeon peas. But I didn’t have the sazon achiote packets nor did I cook the rice in the mixture, and not the right amounts of ingredients and didn’t add any bacon this time, but I “made do”. Hope you like it- we thought it was good. Went swimmingly with some grilled jerk baby back ribs.

Wonderful flavor and so easy to make. Garlic scapes are the tops of garlic as it comes out of the ground, with the undeveloped bud. It has the texture of asparagus and scallion with a big garlic flavor.

Shahi Paneer Curry
This is a curry made with paneer cheese, which is very meaty and a great vegetarian option. You can probably get away with using peanut butter instead of cashew butter, but I do recommend the cashew for the flavor.
When I made this, I served it with bhindi masala curry and lemon rice, both some of my favorites! The bhindi makes a great entree as well, but I like to make a smaller amount and serve it with another type of curry, especially if that curry is light on vegetables.
